Grandma McNair’s Pound Cake


From Addy: “This from Willie’s grandmother who sadly passed away in early 2021.”



Ingredients

  • 3 sticks of butter or margarine, room temperature

  • 1 (1 lb) box confectioners’ sugar

  • 1 tsp vanilla extract

  • 6 eggs, room temperature

  • 3 cups flour, sifted

  • 1⁄4 tsp baking powder

  • 1 tsp almond extract


Directions

  1. Preheat oven to 325° F (160° C).

  2. Cream together butter, sugar, and vanilla. Add eggs one at a time, beating well after each addition.

  3. Sift together flour and baking powder, and add to butter and sugar mixture a little at a time.

  4. Bake in a greased and floured angel food cake pan (tube pan) for 1 hour, until a toothpick inserted in the center comes out clean.

  5. Cool in pan for 30 minutes before serving.
