Ingredients
1 lb mixed mushrooms
1 large onion
1 clove garlic
2 tbsp ghee
6 cups stock or bouillon
2 tbsp sherry, or cooking sherry
1⁄4 tsp sage
1⁄4 tsp of tarragon
1⁄2 tsp dried parsley
Salt and pepper, to taste
Directions
Saute onions and garlic in ghee until transparent.
Add mushrooms (and more ghee if needed) and cook for 8 minutes.
Add stock, sherry and seasonings, and simmer for 1 hour.
