Mushroom Soup



Ingredients

  • 1 lb mixed mushrooms

  • 1 large onion

  • 1 clove garlic

  • 2 tbsp ghee

  • 6 cups stock or bouillon

  • 2 tbsp sherry, or cooking sherry

  • 1⁄4 tsp sage

  • 1⁄4 tsp of tarragon

  • 1⁄2 tsp dried parsley

  • Salt and pepper, to taste


Directions

  1. Saute onions and garlic in ghee until transparent.

  2. Add mushrooms (and more ghee if needed) and cook for 8 minutes.

  3. Add stock, sherry and seasonings, and simmer for 1 hour.
