From Gordon: “Growing up, my parents would make waffles now and then, which were always accompanied by cursing and swearing as the waffles became glued to the old waffle iron. Since we have been making our own waffles, thanks to teflon, they always come out perfect. Changing to a yeast-based recipe adds a new dimension to the aroma and taste.
Ingredients
2 1⁄4 tsp active dry yeast (1 packet)
1 tsp sugar
1⁄2 cup warm water
2 cups warm milk
2 eggs
1⁄2 cup butter, melted
2 1⁄4 cups flour
1 tsp salt
1⁄8 tsp baking soda
Directions
Heat milk and water in a medium bowl to 110-115° F. Dissolve yeast and sugar into warm water. Let the mixture stand for 5 minutes, until yeast starts to bloom. Beat in eggs and butter.
In another bowl, combine flour, salt, and baking soda. Stir into yeast mixture, just until combined.
Cover and let rise in a warm place until doubled, about 45 minutes.
Stir mixture down. Bake in a preheated waffle iron according to directions.
