Zucchini Bread


I got this recipe from Arielle, who was convinced I didn’t eat enough vegetables. As much as I don’t love zucchini, I do love this bread. Once the chocolate chips go in, you’d never know there was a whole zucchini in it, it’s that good.



Ingredients

  • 1 1⁄2 cup flour

  • 3⁄4 cup sugar

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • 1⁄2 tsp salt

  • 1 egg, lightly beaten

  • 1⁄2 cup vegetable oil

  • 1⁄4 cup milk

  • 1 tbsp lemon juice

  • 1 tsp vanilla extract

  • 1 cup shredded zucchini (one average-sized zucchini)

  • 1⁄2 cup chocolate chips (optional)

  • 1⁄2 cup chopped walnuts (optional)


Directions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper. If making muffins, grease 12 muffin cups, or line with paper muffin liners.

  2. Combine flour, sugar, baking soda, cinnamon, and salt in a large bowl. Mix egg, oil, milk, lemon juice, and vanilla extract in a bowl; stir into dry ingredients until just moistened. Fold in zucchini, chocolate chips, and walnuts. Fill prepared loaf pan, or prepared muffin cups 2⁄3 full.

  3. Bake loaf in preheated oven for 45 to 55 minutes, or until a toothpick inserted in the center of the loaf comes out clean. For muffins, bake 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
