Ingredients
3 lbs sweet potatoes
3 tbsp butter
1⁄4 cup brown sugar
Pinch of salt
Milk (optional)
1 pkg marshmallows
Directions
Wash the potatoes and cut off the ends.
Boil potatoes in a large pot and cover with a lid for about 30 minutes. When you stick a fork into the potatoes, they should be tender.
Drain the potatoes and peel while they’re warm.
Put potatoes, butter, brown sugar, and salt into a mixer and beat until well mashed. Add milk if the potato mixture is not moist enough.
Preheat oven to 350° F (175° C).
Place potato mixture into a casserole dish and put the marshmallows on top right before cooking.
Bake on the middle rack for 30 minutes. Watch that the marshmallows don’t burn.
