Sweet Potatoes West African Style

Ingredients
3 lbs sweet potatoes
1 tsp oil
1⁄3 cup finely chopped onion
1 thumb-sized piece of ginger, peeled and grated
2 cloves garlic, minced
1 1⁄2 tsp ground cumin
1 1⁄2 tsp ground coriander
1⁄8 tsp ground red pepper
3⁄4 cup water
3⁄4 cup tomato sauce
1⁄4 cup peanut butter
1 tsp suga
1⁄4 tsp salt
Directions
Preheat oven to 375°F (190°C).
Prick potatoes with a fork, and bake for 1 hour until tender. Cool slightly.
Meanwhile, heat oil in a skillet over medium-low heat. Cook onion, ginger, and garlic for 3 minutes. Add cumin, coriander, and pepper and cook for 1 minute.
Add water, tomato sauce, peanut butter, and sugar and stir until smooth. Bring to a simmer and cook for 2 minutes, until thick.
Cut cooled potatoes lengthwise, cutting to, but not through, the other side. Spoon about 1⁄4 cup of the sauce into each potato.
