Ingredients

  • 3 lbs sweet potatoes

  • 1 tsp oil

  • 1⁄3 cup finely chopped onion

  • 1 thumb-sized piece of ginger, peeled and grated

  • 2 cloves garlic, minced

  • 1 1⁄2 tsp ground cumin

  • 1 1⁄2 tsp ground coriander

  • 1⁄8 tsp ground red pepper

  • 3⁄4 cup water

  • 3⁄4 cup tomato sauce

  • 1⁄4 cup peanut butter

  • 1 tsp suga

  • 1⁄4 tsp salt

Directions

  1. Preheat oven to 375°F (190°C).

  2. Prick potatoes with a fork, and bake for 1 hour until tender. Cool slightly.

  3. Meanwhile, heat oil in a skillet over medium-low heat. Cook onion, ginger, and garlic for 3 minutes. Add cumin, coriander, and pepper and cook for 1 minute.

  4. Add water, tomato sauce, peanut butter, and sugar and stir until smooth. Bring to a simmer and cook for 2 minutes, until thick.

  5. Cut cooled potatoes lengthwise, cutting to, but not through, the other side. Spoon about 1⁄4 cup of the sauce into each potato.
