Ethan’s Easy Weeknight Daal


From Ethan: “If you’re feeling wild, I use the daal as ‘beans’ sometimes to make Indian tacos. Add in some chicken thighs seasoned with garam masala, salt, pepper, garlic powder, and some cayenne cooked in a skillet which you then cut up into chunks or strips afterwards. Throw it all in some naan with the dal and some cheese or whatever else you like in tacos.”



Ingredients

  • 1 1⁄2 cups dried red lentils

  • 4 cups water

  • 1 tbsp olive oil

  • 1 onion, minced

  • 1 tsp cumin

  • 1 tsp coriander

  • 1⁄4 tsp chili powder

  • 1⁄2 tsp garam masala

  • Salt and pepper, to taste


Directions

  1. In the bottom of a Dutch oven, saute onions in olive oil for about 10 minutes, until fragrant. Add in spices, and mix well. Add lentils and water. Bring to a boil.

  2. Simmer for 15 minutes or until lentils are thoroughly cooked (mushy). Blend using a hand blender if desired.
