Ingredients
1 lb penne pasta
1 tbsp olive oil
1 clove garlic, minced
1⁄3 lb prosciutto, sliced
1 (14 oz) can diced tomatoes
1 tsp dried basil
Salt and pepper, to taste
3 tbsp vodka
1 cup heavy cream
2 tbsp freshly grated parmesan
Directions
In a medium skillet over medium heat, heat oil, and add garlic and prosciutto. Cook until prosciutto browns.
Add tomatoes, basil, salt and pepper and bring to a boil. Reduce heat and simmer until liquid is reduced.
Meanwhile, cook pasta according to directions. Drain and set aside.
Add vodka and cream and heat until thickened. Pour over pasta. Add cheese and serve.
