Meat Sauce


This is my go-to meat sauce (and my mom’s). It works with or without meat and is delicious over some spaghetti squash or any pasta.



Ingredients

  • 4 tbsp olive oil

  • 1 onion, chopped

  • 1 carrot, chopped fine

  • 3 cloves garlic, minced

  • 2 (28 oz) cans peeled tomatoes

  • 1 (6 oz) can tomato paste

  • 1 tsp black pepper

  • 1 tsp sugar

  • 1 lb lean ground beef

  • 1 tsp thyme

  • 10 fresh mushrooms, diced


Directions

  1. In a saucepan, heat oil and lightly brown onion, carrot, and garlic. Stir in tomatoes, tomato paste, pepper, and sugar. Simmer gently for about 30 minutes.

  2. While sauce is simmering, brown ground beef in a skillet over medium-high heat, drain off excess fat. Add meat and thyme to tomato mixture. Cover and simmer for about 30 minutes, stirring occasionally. Add mushrooms and cook for another 10 minutes.

  3. Serve with 1 lb pasta, cooked al dente.
